Fish Patties


  • 400 g sweet potatoes cut into cubes
  • 150 g frozen peas (cooked)
  • 400 g salmon or tuna (canned or freshly cooked)
  • 80 g sourdough breadcrumbs
  • Finely chopped herbs e.g. parsley or dill

Microwave or boil sweet potatoes until just tender; mix and mash the potato and peas, and combine in a bowl with all other ingredients. Form into patties and place in fridge for 20—30 mins, and then lightly fry in a pan with a splash of olive or canola oil to brown. Serve with salad or steamed vegetables.

Rainbow Chips


  • Cut the following vegetables into approx. 5 cm chip like strips — 2 parsnips, 1 sweet potato, 1 beetroot
  • 2 tbspn rosemary
  • 2 cloves of garlic, crushed
  • 2 tbspn olive oil

Pre heat oven to 200°C. Mix vegetables with oil, rosemary and garlic and spread vegetables on a baking tray. Bake for 20 mins and then turn vegetables over and cook another 15 mins, or until browned.

Chicken Bolognaise


  • Lean chicken mince (500 g)
  • 1 green or red capsicum finely chopped
  • 1 small finely diced onion
  • 1 clove garlic finely chopped
  • 1 cup finely chopped mushrooms
  • ½ cup finely diced celery
  • 1 440 g canned diced tomatoes (no added salt)
  • 2 tbspn tomato paste (no added salt)
  • 2 tbspn parsley chopped
  • 2 tbspn olive oil

Heat olive oil and then add onions and garlic. Saute until softened and slightly caramelised. Add the mince and cook until browned.

Then add celery, capsicum and mushrooms and cook for a further 4 minutes; add tomato paste, chopped tinned tomatoes and parsley.

Pumpkin, Carrot and Parsnip Soup


  • 1 chopped onion
  • 1 clove crushed garlic
  • 1 heaped tspn cumin
  • 300 g pumpkin cut into large cubes
  • 3 carrots sliced thickly
  • 2 parsnips sliced thickly
  • 1 litre no added salt chicken stock

Cook the onion and garlic for 2—3 minutes in a splash of oil until softened and slightly browned;

Add all other ingredients and bring to the boil, and then simmer for 15 minutes or until soft.

Blend soup and serve with Greek yoghurt.

Basic Vegetable Stir Fry


  • 1 red onion sliced
  • 2 cloves crushed garlic
  • 1 tspn finely chopped ginger
  • 1 cup green beans cut in half
  • 1 cup cauliflower pieces
  • 1 capsicum, sliced
  • 1 cup broccoli pieces
  • 1 cup halved snow peas
  • 2 tbspn low salt soy sauce
  • 2 tbspn oyster sauce
  • 2 tbspn Shaoxing cooking wine
  • ½ cup water or low salt chicken stock

Heat 2 tbspn rice bran oil or vegetable oil in a wok or frypan; fry onion, ginger and garlic for 1 minute on high heat; then add vegetables and cook for 2 minutes.

Stir in 2 tbspn low salt soy sauce, 2 tbspn oyster sauce, 2 tbspn Shaoxing cooking wine and cook for another minute until the sauce thickens. Serve with brown rice or quinoa

If adding protein e.g. chicken, slice meat into small bite pieces and stir fry separately in wok with 1 tbspn oil on high heat. Remove when meat turns slightly brown and set aside. Add the meat to the vegetables before adding sauces.

Quick Pizza Dough


  • 1 ½ cups self raising flour
  • ¾ cup warm water
  • Extra flour

Mix flour and water in a mixing bowl or food processor until it forms into a soft ball. Add more water if dough too hard, or more flour if too soft. Divide dough into 3 pieces and flatten with a rolling pin into desired shape. Put dough onto a baking tin and place on your toppings of choice. Put in preheated oven at 220°C for 15—20 mins until cheese melts. Alternatively put in a nonstick pan with a lid on and put on stove and heat on low heat for 15 to 20 mins.

  • Grated cheese
  • Halved cherry tomatoes
  • Capsicum strips
  • Sliced olives
  • Sliced ham
  • Basil leaves



  • Mixed lettuce leaves
  • Orange slices
  • Avocado slices
  • Halved olives
  • Salad Dressing:
  • 1 tspn white vinegar
  • 3 tspn olive oil
  • Pinch of salt
  • ½ – 1 tspn mustard


Mini Meatballs


  • 500 g lean mince beef
  • 2 tbspn chopped parsley,
  • 2 cloves garlic finely chopped
  • 2 tspn oregano
  • 1 small finely chopped onion
  • 1 egg beaten
  • 1 cup multigrain breadcrumbs
  • 1 grated zucchini

Combine all ingredients, roll into small balls and then roll in plain flour. Lightly brown in a frypan in a little olive or canola oil and then place in moderate oven for 15 minutes until heated through.
